MIDI with sampler

I have been writting music in MIDI for a while now but I have recently come across samplers. I have purchased "Eastwest Symphonic Orchestra" which contains tons of samples of actual orchestra instruments that can be applied to MIDI data. Unfortunaltey I am at a complete loss on how to do this. Has anyone played around with samplers and if so, how can I apply these samples to my MIDI music? Is there any additional software or hardware that I need?
