GS is Roland's extended General MIDI. While in GM you only have one of each instruments, in GS you have the option to select variations of sounds. In GM patch #1 is Grand Piano, in GS it can be 2 or more variations of Grand Piano, you pick the one you like most. MIDI modules, sound cards and synthesizers use digital samples of real instruments, and the quality can be different, depending on the recording of the sample, and the quality of the actual instrument, so it's a good idea to give people more options to choose from.
GS is an improved GM, more sounds, more options.
Yamaha has its own version of GS, it's called XG, and
it's also an improved General MIDI.
