I proceeded to write these down - USER 74, PRESET 2-79, and so on. After exiting MIX mode and trying to find these individual patches, I discovered they aren't there! Where are they and why are they not accessible in the normal way?

Can't answer that specifically, but...if you have another keyboard that you could use as a controller, you could isolate/play an individual program by setting the controller to transmit on just the MIDI channel that's devoted to it in the mix. I've done that so I could go back and forth between the full mix and an individual component without having to toggle between modes.
