If notes transmitted over midi are sometimes changed randomly, it is possible that transmission errors occur.
If notes get stuck up (the key is only 'pressed' by MIDI, not 'released, you will hear this very clearly with organ sounds, less with piano) you are perfectly sure that transmission errors occur.
Reduce the transmission rate to 31kB. Check out any options in your driver that allow you to change speed for reliability.
If this doesn't help, get yourself an internal MIDI interface (at least this helps with PCs)
Disadvantage of internal interface: You can't use the *very* high transfer rate possible with MAC serial port (useful for transfering samples)

Or simply try another MIDI cable-maybe it's broken.
