QS6.1 and cakewalk music creator

My setup is Q6.1 to computer via serial port with cakewalk music creator.I just bought all and haven't edited any mixes - and know very little about the keyboard or midi .I tried to record and playback thru midi (keyboard) but the playback is dictated by what mix select (e.g. I played a piano into track 1 but if I set an organ mix on my keyboard to lay down track 2, what I recorded on track 1 comes through the headphones as an organ). Do I need to do something with the channels on the organ mix before trying to record track 2 such as turning on more channels in that mix in order to hear track 1 as the piano I originally recorded.If I go into a mix and try to turn on channels to play midi will that irrevocably alter that mix (e.g. if I have a good sounding preloaded mix for a piano can I ruin that mix by trying to edit it by turning on or assigning more channels?

Also - in cakewalk you can use their patches to change the sound of a track (you recorded an organ sound on track 1 and can change it to horns). The problem - I can't get each track to accept it's own new patch - whichever one is currently selected is the sound I hear on each track even if I selected a different channel for each track in the cakewalk track box (but didn't change anything on the keyboard).

Does anybody have a checklist of settings that need to be done that makes all this easy? Thanks in advance.
