The quality of the sounds themselvs don't depend on Cubasis but on the synth. With the Audigy (and you should get an Audigy 2, the Audigy has continuing driver problems, and people who've tried to use the A2 drivers with the A1 have had mixed fortunes), you can get hold of lots of different pianos in the soundfont format. For a good concert grand there's a lot to be said for the free Steinway at Warren Trachtman's site,

As a Cakewalk I'm user I'm not well up on free or cheap sequencing software, so I'll have to pass that one on to someone else.
