mimd and a pipe organ

I have a pipe organ that has a midi controller added to it. I have 2 midi voices on each manual and pedel. Right now I'd like to use something like giga studio running on a laptop and using orchestral samples through it. Any suggestions? Will it work? Any thoughts to a good pa system to run the midi output through would be helpful too.
