acutally setting up MIDI?

Hello. I understand the basics of MIDI (or maybe not) and know the ins, outs, thrus, channels etc. I have everything hooked up right but I have not used MIDI extensively and haven't seen anything on actually setting up a rig.
Can someone recommend a good setup for 3 keyboards and a PC as far as base channel assignments, MIDI/LOCAL/BOTH, MULTI/POLY/OMNI modes, track channel assignment, track MIDI/LOCAL/BOTH, for all 3 keyboards with 1 being a master. I would like the most flexibility in multi timbral sequencing and the occasional layering.
I want to set it up once and reserve channels once that will work for most purposes before doing too much work.
