changing programs on a keyboard from e.g. piano to violin is represented in Midi through a so-called program change message. In your case, these messages apparently don't end up with the wavetable synth. That means that you either are not sending or not recording them. Don't know Acid Pro myself but usually there are midi filters that can be set. In your case these filters are probably exluding the program change messages to be recorded. That, or your keyboard doesn't generate them (which I don't think is the case).
