Keyboard and controllers

I have a basic problem of comprehension. I understand the basic concept of MIDI i.e,. a stream of codes telling a sound device which sounds to play together with various parameters this, I understand, is controller data and there is a standard list of these controllers with pre-defined actions.
Where Im having a problem is understanding the concepts of assignable controllers and controlling these via my keyboard. My keyboard has 16 knobs described as assignable controllers and Im not sure what to use them for. Can anyone throw some light on this for me?
