I need help using some MIDI capabilities

I apologize in advance for my lack of terminology regarding MIDI, but I will try my best to comunicate what creates my annoying unrest. I have SONAR on my computer, and I've been able to make quite a few MIDI files with no problems, but eventually I ran across things I needed and could not do with the knowledge I have. Usually I'm very good at figuring stuff out on my own, but now I'm stumped. I was trying to figure out how to make a note in MIDI do as a guitar does when a note is bent (making it's pitch higher or lower WHILE IT IS STILL PLAYING). I know it is possible because I have the proof in another file I had downloaded in which it is distinctly done, and believe me I've tried analyzing that file extensively, and even tried copy/pasting the note and the whole track from one file to the other, but to no avail. The thing is that as far as I can tell, apart from the sound of that note, nothing else seems to be out of the ordinary. In SONAR I tried something that is called "transpose", but it only changes the pitch of the whole note start to finish. So is it that I simply can not do it with SONAR? If so, then with what can I? Another thing, and easier to explain, is that I was wondering if it was possible to add more 'instruments' (or 'patches' I believe they are called) to the ones I'm already able to use, and if so, how?
