In Media Player go to Media Library to get a catalogue of the media on your PC set up, then click on New Playlist. All your music files will be listed in "All Audio", some may also be grouped under album, artist or genre depending on what info the file's creator has provided. Right click on a file and choose Add to Playlist, or simply drag and drop it onto the entry in the tree view for the new playlist you just created. Click on the playlist and you'll get a list of the items in it, whose order you can rearrange by dragging and dropping. Then just click on an item in the playlist to start playing in the usual way.

Personally I prefer WinAmp to Media Player for this kind of thing (in fact for pretty much any kind of thing) - it's more elegant, especially with a nice skin. Freeware from www.winamp.com
